I'm harvesting so much out of my garden that I can't eat it all! My solution, I learned to can. My first attempt at canning was 7 pint jars of dilly beans! Hopefully they'll turn out well, I just did a bunch of online research. I found my canning pot at a yard sale for $3. What a steal! Did you also know that canning salt is the same as Kosher salt? It just means that there is no iodine in it.

I also made 4 loaves of Zucchini bread from just one overgrown Zucchini. I also found out that most everyone love it and it's easy to give away!

WOW Basie! Way to go! I tried to can salsa when I had my little garden in Reidsville, but I found that I don't like canned salsa at all... gotta be fresh b/c I don't like it cooked. I am excited to try your dilly beans! Look delish! You migth have to teach me!

Every year I say I'm going to do a garden, every year I run out of time, but I'm jealous because I love the fresh stuff and wanted to have my own. I hope you make something for Christmas this year. Great skills to have!

Way to go Beth! I am so proud of your effort to make preserves! Are you going to can tomatoes also? We are tickled that you are enjoying the garden.
