Summertime...

There will be a few less hurricanes this summer as I will be teaching more. This is a good thing. UMKC changed their schedule from 1-5 hour night for 8 weeks to 2-4 hour nights for 5 weeks and I will be teaching 2 classes. First five weeks on T/Th I will teach "school social work" and the second 5 weeks I will teach M/W and will finally teach my "death, dying and bereavement" class. I guess I get to mark one off my bucket list.

The Global Peace Index...

Apparently it’s a competition now. A new study called the Global Peace Index, ranks nations across the world according to their “peacefulness,” using factors like military spending, violent crime rates, the size of a country’s prison population and organized crime rings to reach their conclusions.

The number one country? Norway, followed closely by New Zealand, Denmark, Ireland and Japan. Not too surprisingly, the US ranks somewhere near the back of the pack, earning a ranking of 96th out of 121, Iraq being the 121st. Other nasty places to live, peace-wise, include Sudan (120), Israel (119), Russia (118) and Nigeria (117). Other factors the study used to determine rankings (which may explain why Israel is grouped among the former) include a country’s relations with its neighbors and political instability.

Yes- we should be proud...maybe the president will listen to Governor Sebelius and work toward change (and I will lose 100 pounds). We can dream...

Monday, January 28th

Pasta Florentine...

Sauce:
2T butter
2T flour
1 cup milk
2 generous heaping T of Parmesan cheese
dash pepper
1/2-1 t. dry basil (1-2 T fresh)
8 oz. spinach or more for more sauce (fresh or frozen broken apart)
1/2 box cooked and drained pasta

Melt butter in a medium sauce pan. Add flour and mix with a spoon till flour is fully blended. Cook for 1 minute or so, add milk all at once and give it a good stir. Don't worry at this point if it seems slightly lumpy, those will dissolve as this cooks. Add cheeses, pepper, and basil. Cook for 5 minutes stirring until you see the sauce thickening enough to coat the spoon. Taste test and added 1/4-1/2 t. salt if needed. Add spinach. Cook a few minutes more till hot again, place on pasta.

What's up...

* Delaney has taken to wearing bathing suits around the house- she saw it in a beauty pageant, it matters not that it is winter.
* Mom and Dad are safe in North Carolina- leave Monday for Myrtle Beach.
* Kevin got a new car- a Jaguar!
* It was 56 degrees in Kansas City yesterday- Tuesday it is going to snow.
* We went to see "Out of Order" at the Dinner Theater- it was very funny and the pasta Florentine was excellent!
* Got the new Photoshop Elements 6- it rocks! Very quick and the Mac version comes out in March (been waiting 1.5 years for the new version).
* People in Charlotte are busy visiting with Nana & Poppy- fun for all.
* What's up with you- this is a good place to let Nana & Poppy know what's happening while they are gone- basketball scores, funny things the kids say, awards, thoughts, how you are doing with your exercise?

From our "Personal Coach"...Kris

FIRST and foremost you have to find what will make YOU do this - for me it was anger at everyone - Mark, Mike, my job life in general but it got me moving .

Here is my first "posting" - its hard to get into exercise but you will never lose weight without it - you have to understand that (my new thought process had to go from "oh I will just watch what I eat and after I lose weight then I can go back to what I enjoy" WRONG - I had to learn to work in what I like but in right portions etc)

Anyway finding time to exercise and right now a place is hard - here is a chart for doing things at work (that are not really obvious!) that you could do to burn more calories - try incorporating some of them to burn at least 200-300 more calories at work, combine that with a good eating habit such as not eating after 8:00 pm you will see results - ask Farley she lost a ton of weight and its because she's hoofing it up and down stair all the time at her job.

Anyway - this could be good for you to start with:
Activity/Minutes=Calories Burned
Walk up stairs/15=128 (going upstairs @10 times over the course of the day depending on # of stairs)
Walk down stairs/10=33
Stand while chatting =58
On phone/30
Clean out desk drawers/15=40
Visit a coworker 5 times/20 =75 (find someone or somewhere that it takes about 2-3 min to walk to - I do this)
Type on computer/120=230
Do heel raises at desk/5=19
Touch up makeup/5 10
Total min/220=593 (amazing huh?)
(* calories burned are based on a 140 pound woman)

If you consciously make an effort to take stairs 2x more or walk and see a friend more often you will get more exercise - then you could take a walk for 15 min at night too.

Trail Bars...


Trail Bars
1 1/2 cups old-fashioned oatmeal
1 1/2 cups all-purpose flour
1/4 cup toasted wheat germ
1 teaspoon baking powder
1/2 teaspoon salt
1-2 teaspoon cinnamon
1 cup unsalted butter, softened
1/2 cup light brown sugar
2 eggs, slightly beaten

1/2 cup honey
2 teaspoons vanilla extract
1 teaspoon almond extract
1/2 cup orange juice
6 ounces shredded coconut
1. Preheat oven to 350.
2. In a medium bowl, mix oatmeal, flour, wheat germ, baking powder, salt, and cinnamon.
3. In a large bowl, cream the butter and sugar together at medium speed.
4. While beating, add eggs, honey and vanilla and almond extracts in a steady stream.
5. Beat well.
6. Using a large spoon, fold ingredients into the butter/sugar mix in the following order: half the dry ingredients, half the orange juice, all the coconut, remaining juice, then remaining dry ingredients; making sure everything is fully incorporated before adding the next item.
7. Pour into an ungreased 9X13 pan.
8. Bake at 350 for 30-35 minutes.

I made these last night from the Penzey's catalog- they are pretty tasty but I thought a little dry so I would put them in a smaller dish (make them thicker) or cook a little less.

Going into week 3 of the new year- are we exercising, eating better, trying for a tight butt?
Well- it's hard but here is an insight: Walking a half hour a day or 3 hours per week is associated with a decreased risk of heart disease. Walking 7 hours a week is associated with a decreased risk of breast cancer and Type II diabetes.

Build a Habit: Walk at least 5 days a week, even if some days you must decrease your time, in order to build your new healthy habit increase the time you spend walking each week before working on speed.

Week 1: Start with a daily 15 minute walk at an easy pace.
Walk five days the first week. We want to build a habit, so consistency is important. Spread out your rest days, such as making day 3 a rest day and day 6 a rest day.
Weekly total goal: 60 - 75 minutes.

Week 2: Add 5 minutes a day so you are walking 20 minutes, 5 days a week. Or you may wish to extend yourself more on some days, followed by a rest day.
Weekly total goal: 75 - 100 minutes.

Week 3: Add 5 minutes a day so you are walking 25 minutes, 5 days a week.
Weekly total goal: 100 - 125 minutes.

Week 4: Add 5 minutes a day to walk 30 minutes, 5 days a week.
Weekly total goal: 125 - 150 minutes.

Snags:If you find any week to be difficult, repeat that week rather than adding more time, until you are able to progress comfortably.

I just wanted to log in and let everyone know that we will be leaving on January 24 to go SOUTH . Sometimes I forget to let everyone know and then they wonder where in the world we are. We will be going to Charlotte to see Kris, Kevin, and hopefully Erin and then onward to the south. We will be returning the end of February. Depends on the weather and how long we take to come home but should be around the 25th. Don't forget us when we are gone and call so I don't go nuts with not hearing your voices. I will need to know the scores of Kams games, scores of Kenny's games, what is going on in Miss Delaney's life, if Miss Sarah and Miss Katie are keeping busy. Hey, by the way everyone, Shaun, Katies boyfriend got to be an Eagle Scout this last weekend. Kelly said it was very impressive. I'm impressed just knowing that he accomplished it. Congrats, Shawn. He is a very neat kid! Nick got sworn into the union so he is a full union member. Congrats, Nick. Kenny's team beat Lyons by 30 points last night, yippee. They are a neat bunch of kids. I think I will adopt all of them! Kris will be up for one night in January so I can smooch on her. Bob has surgery in about a week, good luck, and hope you will be up quickly. Lulu is going to take ice skating lessons. That ought to be a hoot! That child will try anything. Nooch starts his new job next week, good luck and I hope you will like it. The people you will be working with are really great!!!! Especially one of them!!!!! That is about it. Love you all, Mom

I asked her if she was going to give me a big hug and kiss when she gets big- she told me "Sure!"- I'm going to hold her to that. She also sang and was playing with a pink castle with that color and that color on it- she was very cute.

Vermont, here I come!


107047 (97k image)Well, in the spirit of lack of posts, I thought I'd post something coming up for me. Tomorrow I board a plane for Vermont! I had a free plane ticket that I got on our way back from AZ and I am meeting with a potential future design studio while I'm there. They don't have a job for me, but they still wanted to meet me. Seems crazy I know, but there are not a lot of design studios in Vermont, so it's not a bad idea to put a foot in the door when they do have a job open! I think Vermont is the next place I'd like to move, it's a lot closer than Colorado (which makes my mother happy) and I could still drive home when needed. At the very least, I'll check out the state and see if it is somewhere I'd like to move someday. At least I'll get three days of snowboarding in (that's my new board that I hope arrived today in the mail)! Which I'm truely excited about, since I live in the land of cars, not snow. DC has been alright to live in, I certainly have everything I need just a short drive away (or not so short because of traffic), have found friends, am successful at both my jobs... but it just isn't the place for me. You can take the girl out of the country, but you can't take the country out of the girl!

Back in 2004 when I decided to do a family blog I envisioned laughs, uplifting stories, jokes, gentle ribbing, a place to keep in touch, a place to make you feel good.
Over time...it is being used less, it has gotten more expensive and the fun place has turned more cynical and sarcastic. Today a family member told me they didn't want to read it any more because it made them sad( sad to see the comments people are saying)- so I made a decision. I will not be renewing this page and plan to take it down soon. Thanks for several years of fun- it's time to move on...

That little gesture can make someone's outlook and day just a little happier. Don't we at least owe that to each other? Just show some human kindness; it may have a trickle down effect.

New Year’s Resolutions...

Let’s see … it’s already January 2nd. So by the time you read this, it’s a fair bet that your New Year’s Resolutions have probably slipped away, been downgraded, been forgotten.

It’s a familiar sensation. How do you feel about that? Remarkably un-upset? It seems that for most of us, the New Year’s Resolution is little more than a self-created stick you can use to beat yourself up with when, inevitably, you fail to deliver.

I think it’s because so many resolutions are the same old list. THIS TIME I’ll start exercising, stop smoking, lose weight, talk more with those I love, spend less time with those I don’t actually like…

It’s not that these are bad - they’re all very worthwhile, very noble. It’s just that they’re stale and tired. Not only have you had that resolution before, you’ve probably had it playing in the background of your mind throughout the year (”lose weight”… “still haven’t lost weight” … “still haven’t lost weight” … “still haven’t lost weight” …). On January 1, you just get to rub it in.

So let me offer you two different routes to get some oomph into your New Year’s Resolutions. Do at least one. Even better, do both.

A. Sound & Sensible

Recipe for a Happy New Year...

" Take twelve fine, full-grown months; see that these are thoroughly free from old memories of bitterness, rancor and hate, cleanse them completely from every clinging spite; pick off all specks of pettiness and littleness; in short, see that these months are freed from all the past—have them fresh and clean as when they first came from the great storehouse of Time.
