Way to go Kate!


Wednesday night Kate has an end of the year Award Ceremony at school and she was awarded the Geneva High School Chemistry Award for Top 10% in the Regents Chemistry for Geneva High. Couldn't be more proud of her to get this as a Junior. This will be great on her resume for Colleges for Pharmacy. Hard to believe that in a few short weeks she will be a Senior and her last year in High School. Where did the time go.......at any rate wanted to share as she works hard and again beyond proud of her!

Three Cups of Tea...

I finished the book- I like the story but didn't care for the story teller (the book is written from Relin's perspective as an admiring journalist interviewing and observing Mortenson). I wish he would have written it in first person. Still glad I read it!

The title from a Balti proverb..."The first time you share tea with a Balti, you are a stranger. The second time you take tea, you are an honored guest. The third time you share a cup of tea, you become family."

The book describes Mortenson's transition from a mountain-climber to a humanitarian committed to reducing poverty and educating girls in Pakistan and Afghanistan. He did this by co-founding the "Central Asia Institute," which has built over 78 schools in the most remote areas of the countries.

Given the current issues in Pakistan and Afghanistan- it made for an interesting read. Give it a whirl!

Our gardens...

1:Our new rain barrel, if you have lots of plants- might as well conserve water and let Mother Nature help! Water off the roof, fills barrel and you have it to water with. Has screen to keep out mosquitoes.
2:We built 2 raised beds- see how they work (if we like them will probably do all raised beds in the garden). Bed 1 has 5 Italian lettuces and 2 spinach's. The second bed has peppers- 3 types of Italian (9 plants), 1 jalapeno and 1 ancho.
3:We use to have asparagus here- it didn't grow so this year I have beans in the back and golden beets from Italy. If you look toward the back you will see 2 black bins- these are our potatoes.
4: This garden has 3 zucchini plants (yes, from Italy) and 1 pan pan squash (not from Italy), broccoli, onions and 4 types of Italian tomatoes.
5: This is Father Ed's land- he lets us plant it. I was afraid my seeds from Italy might not do well (just in case I do not want a summer without tomatoes!) so we planted 1 set of Italian cherry tomatoes and 16 different American tomatoes plus one eggplant.
6: Linda's sister left a wagon here so we transformed it- took off the seats, stained, added art and planted basil, parsley, rosemary, wheat grass, cilantro, chives, stevia, and oregano- they are all doing well.
With luck- tomorrow I will be putting in a compost bin- this is after I see the movie, "Angels & Demons".

Diet Snack Idea - Hummus Deviled Eggs


Since we all seem to be watching our middles these days, I thought I would post a recipe idea that I thought was ingenious.

I recently got the Biggest Loser Fitness Program book (LOVE IT) and decided to check out the "30-Day Jumpstart" book... FANTASTIC! What's nice about it is that it's setup into a 30-day plan with eating plans, recipes, and workouts (there's even a little calendar highlighting the workout schedule which I plan to hang on the fridge). Anyway, the recipes look great! I plan to try the Mini Blueberry Bran muffins, the Pork Stir-Fry with Garlic Broccoli, Asian Chopped Salad, and many others. The one that I wanted to share is below:

HUMMUS DEVILED EGGS

12 hard-boiled eggs
1 recipe Creamy Hummus
Paprika
Italian Parsley (I omitted)

Basically you hard-boil your eggs, cut them in half, remove and discard the egg yolk middle, and fill the whites with hummus! It couldn't be simpler and they are delish! I just used some pre-made hummus by Sabra because I had it, but I will give their recipe for Hummus below...

Makes 12 servings (2 egg halves per serving)
Per Serving: 100 calories, 8 g. protein, 12 g. carbs (2 g. sugars), 15 g. fat (0 g. saturated), 0 mg. cholesterol, 3 g. fiber, 26 mg. sodium.

CREAMY HUMMUS

3 cups cooked chickpeas or 2 (15-oz.) cans chickpeas, drained and rinsed
1/2 cup warm water
3 Tbsp. lime juice
1 Tbsp. Tahini (usually found in the ethnic section of the market)
1 1/2 tsp. ground cumin
1 Tbsp. minced garlic
1 tsp. salt
2 Tbsp. chopped fresh cilantro

Place everything but the cilantro in a food processor and process for 4 minutes, or until very smooth. Add an extra Tbsp. or two of water if necessary. Transfer to a bowl and stir in the cilantro.

Roasted Red Pepper Hummus: Add 2 roasted red bell peppers.

Makes 16 (2-Tbsp.) servings (2 cups)
Per Serving: 60 calories, 3 g. protein, 9 g. carbs (2 g. sugars), 2 g. fat (0g. saturated), 0 mg. cholesterol, 2 g. fiber, 150 mg. sodium.

I plan to keep hard-boiled eggs in the fridge at all times for a quick protein boost in the morning, and then as I need a snack, plop a little hummus in! DELISH! I think I'll go make a serving now! Enjoy!

I want to celebrate all the moms out there who do such and amazing job and work so hard for their families and their children and love them with all of their hearts...
i celebrate our new mommas who have waited so long for this day...
i celebrate all kinds of moms ~ whether your mothering is in how you care for others,
or for your pets, your garden, strangers, nieces, nephews...
you are so needed and so valued and your role is an essential part of the healing our world needs.

but i also want to acknowledge that this weekend can be a hard one for so many.
for the ones who have lost a child.
for the ones who have lost their mom.
for the one who is trying to heal her relationship with their mom or their own children.
for me this weekend i will celebrate with all of you who are celebrating but
i will also be thinking of all the ones who are struggling as well.

This is Delaney's crown she created for CRS Night "Royal Reading Adventure". She brainstormed ideas with Mom and Dad and we came up with lots of good ideas. As you will notice she has 6 points to represent her age and the most important things in her life.
1)Friends 2)Religion 3)Family 4)Mom & Dad 5) Buffy 6) Being Happy (Smile, Laugh)

You will notice the lovely Pipecleaners on the side for decoration (in her favorite colors) along with the heart gems and pink gems (representing all the love and glamour).
Cheetah Dress, Hat, Shoes & Necklace- her love of fashion and jewelry
SpongeBob & Patrick- her favorite show
Bouncy balls- her favorite thing to collect
Dance, Ice Skates, Soccer Balls and Water for her favorite activities
Jeep- because she loves her Dad's Jeep
Microphone, guitar, music notes- for her love of music and singing
Book- for her love of books and reading
Irish coin- represents that she is Irish (sorry, didn't have an Italian flag) that was a late entry
Shoes- her love of shoes
Movie and Game night- to represent her love of movies and playing games

This was a fun project and letting her just make her Collage- and that is French for Creation (in case you didn't know- Delaney will be happy to educate you!)

A visit from Ronald...

Our school participates in the Tab Top program which was started in 1987 in South St. Paul, Minnesota by a group of 30 families from VFW Post #295. They initially presented the local Ronald McDonald House with a check for $120.00, and more than 15 years later the program has raised several million dollars.

Why tab tops? They are easily removed from the can and allow for any individual or community group to participate. Tabs are much smaller and cleaner than cans, enabling the House to handle the large volume that it receives. Besides, the Tab Top Program is unique to the Ronald McDonald House.

Many schools have become involved in the program as service projects or as a learning tool in the classroom. The program teaches Math concepts, recycling and environmental lessons.

Once the tab tops are at the Ronald McDonald House they are put into large French fry boxes and ready for the McDonald's supplier truck to pick them up and take to be sold at a scrap metal company.

FYI: The tab top was invented by Mr. Ermal Fraze. The ring pull can was invented in 1962.

Peace Festival

We had as much fun as in the past years. We still had Dinner for a Dollar with hotdogs. We still had kites and bubbles, and sidewalk chalk but added tie dye, prayer flags and a photo contest of Peace in Nature and Peace and People. We decorated our outside fence, made new
bulletin boards, and had adults perform the music- we had sax, guitar and beautiful harmonies. This was also an event for families to come and say goodbye to our principal. The kids sang "You Raised Me Up", we made Teresa her own Prayer flag. Next week we will have the kids sign the white panels. After they sang, Teresa handed out cupcakes and received lots of hugs. We had old, young and had a very peaceful day.

Today is our Peace Festival...

Peace Flags provide you with a special way to express some of the most important wishes of your heart. In words or pictures, you can display positive wishes for yourself, your family, friends, community, or the world. You may wish to convey something especially for one person (for example, health, success, prosperity) or affirm a concept you would like to see manifested in the world (for example, peace, cooperation, equality, understanding, compassion).
Peace Flags were inspired by the Prayer Flags of Tibet. According to ancient tradition, the prayers printed on the flags are carried on the wind. The traditional flags are blue (for sky), white (for air or clouds), red (for fire), green (for water) and yellow (for earth).

This year we had the students make Peace flags (over 400)- we hung them in the halls (it is really quite a sight)- we did a photography contest- put those on display and we made a special Peace Flag for our principal. Outside of the weather which is suppose to be bad- we are going to have some fun...look for pictures to follow!
