Send a Christmas card...

Chocolate Peanut Toffee

Ingredients
* 4 sticks (1 pound) unsalted butter, cut into pieces
* 2 cups sugar
* 1/4 teaspoon salt
* 4 cups whole cocktail peanuts plus 1 cup chopped (1 pound 10 ounces)
* 7 to 8 ounces 70%-cacao bittersweet chocolate, finely chopped
* Equipment: a 15- by 10- by 1-inch baking pan; a candy thermometer; a metal offset spatula

Preparation
Butter baking pan and put on a heatproof surface.

Bring butter, sugar, and salt to a boil in a 4- to 5-quart heavy pot over medium-high heat, whisking until smooth, then boil, stirring occasionally, until mixture is deep golden and registers 300°F (hard-crack stage; see Kitchen Notebook, page 240) on thermometer, 15 to 20 minutes.

Immediately stir in whole peanuts, then carefully pour hot toffee into center of baking pan. Spread with spatula, smoothing top, and let stand 1 minute, then immediately sprinkle chocolate on top. Let stand until chocolate is melted, 4 to 5 minutes, then spread over toffee with cleaned spatula. Sprinkle evenly with chopped peanuts, then freeze until chocolate is firm, about 30 minutes. Break into pieces.

I wanted to give everyone a heads up that if you tend to give gift cards around the holidays, you need to be careful that the cards will be honored after the holidays. Stores that are planning to close after Christmas are still selling the cards through the holidays even though the cards will be worthless January 1. There is no law preventing them from doing this. On the contrary, it is referred to as Bankrupcy Planning.

Below is a partial list of stores that you need to be cautious about.
Circuit City (filed Chapter 11)
Ann Taylor- 117 stores nationwide closing
Lane Bryant, Fashion Bug ,and Catherine's to close 150 stores nationwide
Eddie Bauer to close stores 27 stores and more after January

Got a letter from the high school today that on Monday December 1st at 7pm Kate will be inducted into the National Honor Society!!!! She rocks this girl does. She is thinking at this time to go to St. John Fisher for Pre-pharmacy! She got a 95 in chemistry for the first quarter and it was recommended she consider pursuing this area. So this is what she is thinking....hopefully with her awesome grades and her great lacrosse she can get a descent scholarship! Way to go Kate!

Toys for Tots...

The school sent home a letter from a Marine asking children to draw a picture about Toys for Tots and that they would be selecting 2 kids from each grade to go shopping at Toys R Us (with a parent) for gifts for needy children. Delaney and I discussed this project and why it was important and she really wanted to participate. So we went to the website and we discussed how the program got started and what it does today and then we looked at pictures of Marine's collecting and providing gifts. She then drew a wonderful picture that I wanted to share with everyone, because SHE WON. She is very excited and I am thrilled that she can participate first hand in the True Meaning of Christmas. We are going to have lots of fun tomorrow morning at Toys R Us. And I didn't realize that the Marine who sent home the letter is the father of one of Delaney's friends in her class (they actually sit at the same table together). So, tomorrow morning, Delaney and Samantha will be out helping other children have a wonderful Christmas! Great Job Delaney!

Cooking for the holidays...

Sensational Double Layer Pumpkin Pie
Makes about 6

4 Ounces cream cheese, softened
1 tablespoon milk or half and half
1 tablespoon sugar
1 1/2 cups whipped cream topping
1 graham cracker crust
1 cup cold milk or half and half
2 small vanilla flavored instant pudding packages
1 can pumpkin pie filling -- (16 oz)
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1 Teaspoon ground cloves

Beat cream cheese, 1 tablespoon of milk, and sugar with wire whisk until smooth. Gently stir in the whipped cream topping. Spread on bottom of graham cracker crust. Pour 1 cup milk into bowl, add pudding mix. Beat with wire whisk for one to two minutes--mixture will be thick. Stir in pumpkin and spices with wire whisk. Mix well. Spread over cream cheese layer. Refrigerate four hours, or until set.

It will say that they were un-able to deliver a package sent to you on such and such a date. It then asks you to print out the invoice copy attached. DON'T TRY TO PRINT THIS. IT LAUNCHES THE VIRUS! Pass this warning on to all your PC operators at work and home. This virus has caused Millions of dollars in damage in the past few days. What's up...

We saw the move- The Secret Life of Bees- It was a great movie and a fantastic book (bring tissue).

* The Chiefs self-destructed in the fourth quarter and lost 30-27 in overtime to Tampa Bay today at Arrowhead Stadium. We don't watch because it is comical- to think some of these guys make millions- here's what's wrong with the economy!

* Changed some rotating pictures and am working on updating birthday pictures...as always, a work in progress.

* Kelly starts her new job today- have a great day!

* Finished decorating the den. Still have trim and door to work on but the room, desk and bookshelves are back together. We have the new desk and picture, bookselves and mirror on the wall (this was on the hearth but looked good with the brown colors, splash of color).

* My 11 year old car got new brakes, rotors, tires, windsheild wipers and an oil change- runs like new!

* New Christmas music is coming out- I got Melissa Etheridge and Yo Yo Ma (cello)- one rock, one classical- both very good!

* Nana has been under the weather. Give her a call to cheer her up.

* Maybe this Chocolate Delight will help!
